What exactly is a Kathi Roll?

The Kathi Roll is one of India’s most popular grab-and-go street meals, evoking true Mughlai flavors. The kebob meats were traditionally cooked on metal or wooden skewers, hence the name Kathi. Although traditional Kathi rolls are filled with meat, this easy and lip-smacking vegetarian alternative uses spicy paneer cubes (cottage cheese) as the main ingredient. This very easy-to-make dish is done in under 30 minutes and is bursting with an interesting mix of spices and tastes.

Preparing Recipe for Paneer Kathi Roll

The stuffing for today’s roll recipe is paneer tikka, which is prepared on a Tawa. You can also prepare green chutney and a mixed vegetable salad to go with your paneer tikka roll. Our outer roll or wrap is made with the whole wheat dough which makes this a nutritious and delicious paneer roll recipe.

You can serve the paneer Frankie as a brunch or an evening snack. The recipe is really simple if you have leftover atta dough. There is some preparation work to be done, such as making the green chutney and salad topping. It is, nevertheless, simple to prepare them.

Ingredients for Paneer Kathi Roll Recipe

For paneer stuffing:

  • 1 Tablespoon butter,
  • 1 Cup Paneer cube,
  • 2 Tablespoon Oil,
  • 1 Tablespoon ginger garlic paste,
  • ¼ Tablespoon Turmeric,
  • ½ Tablespoon Kashmiri Red Chili Powder,
  • ½ Tablespoon Coriander Powder,
  • ¼ Tablespoon Cumin Powder,
  • ½ Tablespoon Garam Masala,
  • 1 Cup Tomato Pulp,
  • 2 Tablespoon Water,
  • ½ Tablespoon Salt,
  • ½ Sliced Capsicum,
  • 2 Tablespoon chopped coriander.

Other ingredients for preparing the recipe:

  • 2 Wrap,
  • 2 Tablespoon mayonnaise (eggless) and,
  • 2 Tablespoon Chilli sauce.

Tasty Green Chutney  Stuff:

  • ½ cup coriander leaves,
  • ½ cup mint leaves,
  • 1 green chili (chopped),
  • 1-inch ginger (chopped),
  • 1 to 2 small garlic cloves,
  • ¼ Tablespoon amchur powder (dry mango powder)
  • ½ Tablespoon roasted cumin powder (bhuna jeera powder).

Instructions to Prepare Paneer Kathi Roll

Before you start with Kathi roll, you must prepare paneer Tikka roll first,

Follow this paneer tikka marination process carefully

  1. Take six tablespoons curd,
  2. Add these…
    1.  ½ tablespoon ginger garlic paste
    2. ¼ carom seeds
    3.  ¼ teaspoon turmeric powder
    4. ½ teaspoon coriander powder
    5. ½ teaspoon cumin powder
    6.  ½ teaspoon garam masala
    7. ½ teaspoon amchur powder
    8. 1 teaspoon Kashmiri red chili powder
    9. Salt (as per your taste
  3. Mix all these ingredients well. You can do it in a bowl or mixer
  4. Drop some lemon juice (not too much, you will not like it)
  5. Now add paneer that had been cubbed
  6. Mix them and let the paste cover the paneer cube, what we call the marination (let it be covered and keep aside for 30 minutes)

Now, head to green chutney preparation:

Preparing Green Chutney

  1. Take ½ cup coriander leaves, ½ cup mint leaves, 1 green chili (chopped), 1-inch ginger (chopped), 1 to 2 small garlic cloves, ¼ teaspoon amchur powder (dry mango powder) OR ½ teaspoon chaat masala (optional), ½ teaspoon roasted cumin powder (bhuna jeera powder).
  2. Add 1 teaspoon water (OPTIONAL) and grind coarsely. Since the coriander and mint leaves are rinsed, the moisture from them helps in grinding.
  3. Then add 2 tablespoons hung yogurt or thick curd.
  4. Grind to a smooth chutney. Remove in a bowl and keep aside. You can even refrigerate the chutney.

Preparing Paneer Frankie Salad

  1. Thinly slice 1 medium onion. Grate carrots and shred the cabbage or thinly slice them. Also thinly slice capsicum (bell pepper). You will need ⅓ cup thinly sliced or shredded cabbage, ⅓ cup grated carrot, ⅓ cup thinly sliced capsicum, and ⅓ cup thinly sliced onions.
  2. Take all the veggies in a bowl. Add 1 teaspoon chaat masala, ¼ teaspoon Kashmiri red chili powder, and 1 teaspoon lemon juice. Also, add salt as per taste.
  3. Mix very well and keep aside.

Preparing Paneer Tikka

  1. Heat 2 tablespoons oil in a pan. Keep the flame to low or medium-low and add the marinated paneer cubes. Add the entire marination. Since I had used hung yogurt, I added the entire marinated mixture as the hung yogurt marination had coated the paneer pieces very well. But if you have used yogurt which is thin, then just add the paneer cubes.
  2. After a minute turn over the paneer cubes. Instead of pan-frying, you can also grill paneer cubes in the oven.
  3. Pan-fry the paneer cubes turning often till the marination is cooked and the paneer becomes soft.
  4. I cooked the paneer for about 4 minutes on a medium-low flame. Do not cook too much as then the paneer will become dense, cook on medium-low flame. Timing will vary with the thickness of the pan, the intensity of the flame, etc. once the paneer is done, remove the pan from the flame and keep it aside.

Making Paneer Kathi Roll

  1. Take one roti. You can also take a parantha or a wrap.
  2. Spread the mint-coriander-curd chutney over it.
  3. now place the paneer tikka cubes in the center.
  4. Top with the paneer Frankie veg salad.
  5. Roll both the sides of the roti and make a wrap. You can cover half of the wrap with aluminum foil. It makes it look presentable and also keeps it warm.
  6. Serve paneer Kathi roll with the remaining chutney or tomato ketchup. You can also add some of the veg salad as a garnish on the paneer roll.
